WILD RICE AND CHICKEN SOUP

Ingredients
  

  • 3 10 3/4 oz. cans condensed chicken broth
  • 2 c. water
  • 1/2 c. wild rice
  • 1/2 c. onion finely chopped
  • 1 c. celery finely chopped
  • 1/2 c. butter
  • 3/4 c. flour
  • 2 c. half and half
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. poultry seasoning
  • 1 1/2 - 2 c. cubed cooked chicken
  • 8 slices bacon cooked & crumbled
  • 2-3 tbsp. sherry

Method
 

  1. In a large saucepan, combine broth and water.
  2. Add wild rice, onion and celery.
  3. Simmer 40 minutes.
  4. In another saucepan, melt butter.
  5. Stir in flour, then slowly add half and half and spices.
  6. Stir until smooth.
  7. Add to rice mixture.
  8. Just before serving, add bacon, chicken and sherry.
  9. Heat through.
